Sweet & Spicy Baked Beans
If you like a bit of a bite to your beans, you’ll love this spicy-sweet version of baked beans…
Sweet & Spicy Baked Beans
Yield: 21 Servings (1/2 cup per serving)
Prep Time: 15 minutes
Cook Time: 1 hour
Ingredients:
1/4 pound finely diced raw bacon slices
1 1/2 cups chopped sweet onion
1/3 cup packed dark brown sugar
3 Tablespoons Dijon mustard
2 Tablespoon finely chopped chipotle chile, canned in adobo sauce
5 (16-ounce) cans beans, rinsed & drained (kidney, white beans, navy, etc)
1 (18-ounce) jar low-sodium barbecue sauce
cooking sprayDirections:
1. Preheat oven to 350°F.
2. Cook bacon in a large, nonstick skillet over medium-high heat until crisp. Remove bacon from pan, reserving 1 Tablespoon drippings in pan, and set bacon aside. Add onion to drippings in pan; sauté 3 minutes.
3. Combine bacon, onion and remaining ingredients (except cooking spray) in a large bowl; toss well. Spoon the bean mixture into a 13x9-inch or 2 1/2-quart baking dish coated with cooking spray.
4. Bake for 45 minutes.
Tips:
*Try using a mixture of different kinds of beans for this recipe.
