Caramelized Ginger Scones

Yield: 2 dozen scones

Ingredients:

2 tablespoons finely chopped fresh ginger
1/2 tablespoon salted butter
3 cups all-purpose flour
5 tablespoons granulated white sugar
3/4 tablespoon baking powder
3/4 teaspoon salt
3/4 cup salted butter
1 cup buttermilk
1 large egg, beaten
1 tablespoon granulated white sugar
cinnamon sugar (1 tablespoon sugar and 1 tablespoon cinnamon)

Directions:

1. Preheat oven to 400 degrees F.

2. In a small skillet over medium heat, sauté fresh chopped ginger in 1/2 tablespoon butter until golden brown and caramelized, 3 to 4 minutes. Remove from heat and set aside.

3. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Using a pastry blender, blend the butter into the dry mix until the butter forms pebble shapes (you may also use your fingers). Add the caramelized ginger. Stir in the buttermilk- do not overmix (the key to a good scone is a semi-dry undermixed batter).

4. Using an ice-cream scoop, scoop out batter onto parchment-lined baking sheet and flatten with palm of your hand. Brush each mound of dough with egg wash and sprinkle with cinnamon sugar. Bake 15 minutes, or until golden brown.
