Slow Cooker Pork Barbecue
Yield: 6 servings

Cook Time: 5 hrs
Ingredients:
5 pounds bone-in pork loin roast
1 medium onion, sliced and separated into rings
1 to 2 cloves garlic, sliced thinly
3 to 4 whole garlic cloves
2 cups sauce (see below)
1 teaspoon freshly squeezed lemon juice
2 tablespoons red wine vinegar
tabasco sauce to tasteSAUCE:
1/4 cup packed brown sugar
1/4 cup cider vinegar
1/4 cup worcestershire sauce
1 cup ketchup
2 cups water
1 teaspoon dry mustard
1 teaspoon chili powder
tabasco sauce to taste
salt to tasteDirections:
1. Place the pork in your slow cooker. Top with onion and garlic. Cook on high for 5 hours or on low for 7 hours, or until pork pulls apart easily. Remove to a platter to cool. Once cooled, pull the pork apart and place in a large skillet (or Dutch oven).
2. Prepare sauce: Combine all sauce ingredients in saucepan. Bring to a boil over medium heat. Remove from heat.
3. Add 2 cups of the sauce to the pork. Stir in lemon juice, vinegar and tabasco. Cook over medium heat until bubbly.
Tips:
*The leftover sauce is great with chicken as well.
