2 tablespoons freshly squeezed lemon juice (about 1 lemon)
1 tablespoon extra-virgin olive oil
2 teaspoons finely chopped shallot
2 teaspoons chopped capers
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 (6-ounce) halibut fillets
1/2 teaspoon kosher salt
2 tablespoons chopped fresh chives
Prepare vinaigrette: Combine first 6 ingredients in a small bowl; stir with a whisk.
Prepare fish: Heat a nonstick grill pan over medium-high heat. Coat pan with cooking spray. Sprinkle fish with 1/2 teaspoon salt. Add fish to pan; grill 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
To serve, spoon vinaigrette over fish. Sprinkle with chives.
