Maple Sweet Potatoes


5 cups (1/2-inch thick) slices peeled sweet potato (about 2 pounds)
cooking spray
1/2 teaspoon salt, divided
1/4 cup maple syrup


1. Preheat oven to 350°F.

2. Arrange half of potato slices in an 11x7-inch baking dish coated with cooking spray; sprinkle with half of the salt. Arrange remaining potato slices on top; sprinkle with remaining salt. Pour syrup over potatoes.

3. Cover and bake for 1 hour, or until tender.


*If you are preparing this recipe as gluten-free, just be sure to use a brand of maple syrup that is known to be GF.
