4 pounds yams
1 tablespoon butter, melted
1 tablespoon honey
juice and grated rind of 2 oranges
salt, pepper and nutmeg to taste
1. Preheat oven to 325° F.
2. Boil yams in covered pan of water until tender. Drain; drop in cold water and slip off skins. Rinse yams, chop and put in a large bowl. In a small bowl, whisk together the butter, honey and orange juice/zest. Add to the yams and toss gently.
3. Spoon into a buttered casserole dish. Sprinkle with salt, pepper and nutmeg. Bake for 30 to 40 minutes, or until golden.
