3 Tablespoons red wine vinegar
2 Tablespoons white wine vinegar
2 Tablespoons minced shallots
1/2 teaspoon salt
1/2 teaspoon black pepper
2 Tablespoons walnut or olive oil
2 large Golden Delicious apples, julienned
2 large Braeburn apples, julienned
3 head Belgian endive, leaves separated
1/3 cup crumbled blue cheese
1/3 cup chopped walnuts, toasted
1. Combine red and white wine vinegars, shallots, salt and pepper in a small bowl. Add oil, stirring well with a whisk. Add apples, tossing well. Cover and chill.
2. Spoon apple mixture over endive; toss well. Divide among 6 salad plates, and top each with blue cheese and walnuts. Serve immediately.
