Cranberry Apple Relish
Cranberry- Apple Relish
Yield: 8 servings
Prep Time: 30 min + chill time
Ingredients:
1 large orange
2 cups fresh cranberries
1 cup granulated white sugar
2 large red delicious applesDirections:
1. Grate orange peel on coarse grater to make long shreds. Peel orange and cut into 1/2-inch cubes, discarding white pith.
2. Wash and drain cranberries; remove any stems. Chop cranberries very coarsely (or run through a food grinder or processor).
3. Combine grated peel, chopped orange, cranberries and sugar; mix well. Refrigerate until well chilled, several hours.
4. When ready to serve, wash, core and chop apples coarsely. Toss lightly with cranberry mixture just to combine.
