Spiked Eggnog Caffe

Yield: 8 servings

Ingredients:

1/2 cup brandy
3 tablespoons dark rum
2 tablespoons firmly packed golden brown sugar
1 tablespoon instant espresso powder or instant coffee powder
4 cups purchased eggnog

TOPPING:
1/2 cup chilled whipping cream (liquid)
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
freshly ground nutmeg

Directions:

1. In a pitcher, stir the first four ingredients together until the sugar and espresso are dissolved. Stir in the eggnog. Cover and refrigerate. (Can be prepared 1 day ahead)

2. Use an electric mixer to beat the cream, powdered sugar and vanilla in a small bowl until firm peaks form. Pour the eggnog into stemmed glasses or punch cups. Top with a dollop of cream, sprinkle with nutmeg and serve.
