Smoked Chicken and Cranberry Salad

SMOKED CHICKEN & CRANBERRY SALAD

½ cup dried cranberries (2¾oz.)
3 Tbs olive oil
1 Tbs fresh lime juice
¾ lb sliced smoked chicken breast, cut into ½” pieces (3 cups)
1/3 cup sliced almonds with skins, toasted and cooled (1¼oz.)
3 ribs celery, thinly sliced
¼ cup chopped fresh cilantro

1. Soak cranberries in a bowl of warm water to cover 15 minutes, then drain well in a sieve and chop.

2. Whisk together oil and lime juice in a medium bowl, then add cranberries, remaining ingredients, and salt and pepper to taste, tossing to coat.

Servings: 4
