6 medium red potatoes, washed, boiled, cooled, peeled and diced into ½” cubes
1 medium gala apple, peeled, cored and finely diced
1 cup shredded carrots, peeled
1 cup frozen peas, thawed
1 cup frozen white corn
1 cup mayonnaise, to taste
salt and pepper to taste
½ cup sliced green Spanish pimento-stuffed olives

1. In In a large bowl, combine the potatoes, apple, carrots, peas and corn.

2. In a small bowl, combine the mayonnaise, salt and pepper. Add to the potatoes.

3. Arrange in a serving bowl and garnish with the sliced olives.
