We served this with a couple of other quiches for our Easter brunch. So delicious. You won't even miss the crust.
10 slices Canadian bacon (about 1 ounce each)
8 large eggs, beaten
1/2 cup mayonnaise
1/2 teaspoon white pepper
1/2 cup grated Parmesan cheese
4 1/2 ounces brie cheese, cubed
1/2 teaspoon dried Italian herb seasoning
1. Preheat oven to 375°F. Coat 9-inch pie plate with cooking spray.
2. Place Canadian bacon slices, slightly overlapping, around the side and the bottom of prepared pie plate. Set aside.
3. In a medium bowl, combine eggs, mayonnaise, pepper, Parmesan cheese, Brie, and Italian seasonings. Pour mixture into pie plate over bacon. Bake for 30 minutes.
4. After 15 minutes of baking, place foil over quiche to protect it from overcooking and drying out.
