Shrimp Scampi

SHRIMP SCAMPI

1 lb large shrimp
3 Tbs butter
2 cloves crushed garlic
¼ cup chopped parsley
¼ cup white wine
juice of one lemon
salt and pepper to taste
1. Peel and de-vein shrimp.
2. In large skillet, melt butter. Add garlic and cook 15 minutes. Stir and watch carefully- you don’t want the butter to burn. Remove garlic from the pan.
3. Add shrimp to hot butter. Sauté shrimp until firm and pink. Add parsley, wine, lemon and salt/pepper.
4. Serve over rice.
