Garden Green Beans with Bacon
4 slices bacon, cut into 1/2-inch pieces
1 pound fresh green beans, trimmed
1 cup red onion, sliced into 1/8-inch rings
3 tablespoons butter
1/2 teaspoon pepper
1/4 teaspoon salt
1. In a medium skillet, cook bacon until crisp. Drain on paper towels, and set aside.
2. Add water to a 3-quart saucepan, and bring to a full boil. Add the beans, and cook over medium heat, stirring occasionally, until beans are crisp and tender (7 to 10 minutes); drain.
2. Return the beans to pan, and add remaining ingredients. Cook over medium heat, stirring occasionally, until onion is crisp and tender (5 to 7 minutes). Spoon into a serving bowl and sprinkle with bacon.
