1 lb fresh green beans, trimmed
4 slices bacon, cut into ½” pieces
1 cup red onion, sliced into 1/8″ rings
3 Tbs butter
½ tsp pepper
¼ tsp salt
1. In 3 quart saucepan place beans and bacon; add enough water to cover. Bring to a full boil. Cook over medium heat, stirring occasionally, until beans are crisp and tender (20-25 minutes); drain.
2. Return beans to pan; add remaining ingredients. Cook over medium heat, stirring occasionally, until onion is crisp and tender (5-7 minutes).
