Mediterranean Chicken

If you’re like me, you get tired of chicken recipes. Same old thing. Boring. Sometimes dry. I like chicken, but I’m always hunting for the next new thing to do with chicken to make it appealing. I’ve seen some great recipes for Mojito Chicken that I’d like to try. And I’m always up for some sort of lemony chicken recipe too. My most recent worthy find: Mediterranean Chicken from Bon Appetit.

This recipe is filled with wonderful flavors: wild mushrooms, kalamata olives, two kinds of tomatoes, garlic, shallots, capers and pine nuts. And if you look really closely, you can actually see some chicken hiding underneath all that stuff!

Ah, there it is. We really enjoyed this new-to-us chicken dish. Lots of great flavor packed into every bite. The chicken was moist as can be. And those yellow and red tomatoes make the dish pretty too. A chicken recipe success!

It serves 8, but can be easily cut in half.

    This looks so good. This is a dish I have to make when my husband is gone on business and my son and I will eat it. My husband refuses to eat mushrooms and olives (makes me screaming MAD). I get this mag and must have overlooked the recipe.

    Yes, I am like you–always on the lookout for a new chicken recipe. Can’t get enough. This looks like a good one, and those teardrop tomatoes are so cute!

    I saw the post – had most of the ingredients (except for the olives), went ahead and made it – you have my testimonial that it’s delicious and really really filling. It’s like having a party in your mouth.

    The mushrooms look like a fantastic addition–I am a sucker for dishes like this. It looks like a nice one, and not your typical chicken dinner!

    This looks like a chicken dish with lots of flavors and colors. I just tried a new chicken dish tonight with mushrooms and a chinese sauce. Yum!

    i love teardrop tomatoes! however, every time i look at them, they remind me of what shape my body’s going to take if i keep eating the way i do… :)

    So colorful! this dish combines some of my favorite foods: olives, pine nuts and cherry tomatoes … can’t wait to try it myself.
