4 large eggs
1 pound (16 ounces) light brown sugar
1 teaspoon vanilla extract
2 cups biscuit mix (Bisquick is fine)
2 cups roughly chopped pecans
1. Preheat oven to 350 degrees F. Spray a 9x13-inch pan with nonstick spray.
2. In a large bowl, whisk the eggs and the whisk in the sugar and vanilla. Stir in the biscuit mix and pecans. Stir just until moistened.
3. Pour into the prepared pan and bake 30-35 minutes, or until lightly browned and cooked through.
4. Cool before cutting into squares.
*These are delicious with a dollop of real whipped cream.
