2/3 cup granulated white sugar
1/2 cup packed brown sugar
1/4 cup vegetable or canola oil
3 large egg whites
2/3 cup all-purpose flour
2/3 cup whole wheat flour
1/2 cup oat bran
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon allspice or nutmeg
3 cups shredded, unpeeled apples
1. Preheat oven to 350 degrees F. Spray 13x9-inch pyrex pan with nonstick coating. Set aside.
2. In large mixing bowl, combine sugars, oil and egg whites. Beat with a wooden spoon until well blended. Add flours, oat bran, baking soda, and spices. Stir just until moistened. Stir in shredded apples.
3. Pour batter into prepared pan. Bake 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Cool. If desired, sift powdered sugar on top of cake. Cut into small squares to serve.
