Fresh Orange Layer Cake
3 cups cake flour
3 tsp baking powder
1/2 teaspoon salt
3/4 cup shortening
1 1/2 cups granulated white sugar
3 large eggs
1 Tablespoon grated orange zest
1/2 cup freshly squeezed orange juice
2/3 cup milk
1. Preheat the oven to 350°F. Grease and flour two 9-inch round pans.
2. Sift together the flour, baking powder and salt. Set aside.
3. In a large bowl, use an electric mixer to beat the shortening, sugar, eggs and orange rind at high speed for 3 minutes. Beat in the flour mixture a little at a time, alternating with orange juice and milk, beating after each addition until batter is smooth.
4. Divide the batter between the prepared pans. Bake for 30 minutes, or until a toothpick inserted into center comes out clean. Let cool, and then frost with Orange Buttercream Frosting.
