Banana Pudding

3 Tbs flour
1 cup granulated sugar
dash of salt
6 Tbs water
3 large egg yolks
3 cups whole milk
1 stick butter
1 tsp vanilla extract
6 large bananas
16 oz. package vanilla wafers
3 large egg whites
6 Tbs granulated sugar

1. In the saucepan of a double boiler, mix flour, 1 cup sugar, and salt; add water to make a smooth paste in the bottom of the pan.

2. Beat egg yolks and milk together and add to paste. Place over simmering water and stir constantly until the mixture thickens and comes to a boil. Remove from heat and add butter and vanilla.

3. Pour in a 2 quart pyrex that has been buttered and layered with vanilla wafers and then bananas.

4. Preheat oven to 350 degrees F.

5. Beat egg whites until soft peaks form. Gradually beat in the sugar and continue to beat until stiff peaks form. Spread over the pudding and bake until golden.
