Banana Supreme Pie

BANANA SUPREME PIE

6 Tbs cake flour
2/3 cup granulated sugar
¼ tsp salt
1¾ cups milk
2 large egg yolks, slightly beaten
1½ tsp vanilla extract
½ cup heavy whipping cream, whipped
3 medium bananas
½ medium lemon, juiced
One 9″ baked pie crust
1 Tbs grated orange peel
whipped cream for topping

1. Mix together flour, sugar and salt in the top of a double boiler. Add milk and cook over hot water, stirring constantly, until mixture thickens. Cook 15 minutes longer, stirring occasionally.

2. Place egg yolks in a bowl. Pour a small amount of the hot mixture over the egg yolks, beating vigorously; return to the double boiler, and cook an additional 2 minutes, stirring constantly. Remove from heat and let cool.

3. Stir in vanilla and then refrigerate. When chilled, fold in whipped cream.

4. Slice bananas and sprinkle with lemon juice.

5. To assemble pie, layer cream filling and sliced bananas in the pie shell. Garnish with whipped cream and grated orange rind.
