Papaya Sherbet


2 ripe papayas
½ cup fresh orange juice
1 Tbs orange liqueur
½ cup granulated sugar
½ tsp fresh lemon juice

1. Remove seeds and skins from papayas and dice them. Combine papayas and all other ingredients in a food processor and process until very smooth.

2. Pour into a shallow pan and freeze until sherbet has the consistency of mush. Remove from freezer and stir vigorously. Refreeze until mushy again, repeat stirring. Return to freezer until ready to serve.

Servings: 6

*If you do not have a food processor, you may blend the ingredients with an electric mixer.
**Scoop into small, cute serving dishes and garnish with a mint leaf.
