Classic Beef Stroganoff


1½ lbs sirloin steak
2 Tbs fresh lemon juice
1 small onion, grated
4 Tbs butter
2 Tbs flour
½ tsp dried basil
1/8 tsp ground nutmeg
salt and fresh ground pepper to taste
1 pint sour cream
1 Tbs brandy
3 Tbs fresh chopped chives

1. Slice meat very thinly in diagonal slices across the grain. Sprinkle with lemon juice and set aside.

2. Sauté onion in butter; add meat, lemon juice, flour, and seasonings. Cook and stir for several minutes. The meat should remain a bit pink. Stir in sour cream and brandy. Adjust seasonings to taste and stir in chives.

3. Serve hot over noodles or rice.
