Feta- Topped Broiled Chicken

So simple and healthy...
Ingredients:
RUB:
2 Tablespoons tomato paste
1 teaspoon red wine vinegar
1/2 teaspoon dried rosemary
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepperCHICKEN:
4 skinless boneless chicken breast halves (about 1 pound total)
1 large plum tomato, halved and thinly sliced
1/2 cup crumbled feta cheese (2 ounces)Directions:
1. In a small bowl, stir together the tomato paste, vinegar, rosemary, oregano, paprika, salt and pepper. Rub the mixture onto the chicken breasts and set aside.
2. Preheat the broiler. Broil the chicken 6 inches from the heat, turning once- 6 to 8 minutes per side.
3. Top the chicken with tomato slices and broil for 1 to 2 minutes. Top with feta and broil until feta browns slightly .
4. Serve immediately.
Tips:
*You may also substitute goat cheese or shredded Monterey Jack cheese.
*For more even cooking, pound out your chicken breasts until they are of an even thickness.Nutritional Information per serving:
