
RED SNAPPER W/ PINEAPPLE SALSA

¼ cup fresh cilantro, minced
½ yellow bell pepper, seeded and minced
½ green bell pepper, seeded and minced
½ large sweet onion, minced
1 cup fresh pineapple, minced
1 Tbs vegetable oil
3 medium limes, juiced
1 ½ lbs red snapper fillets, cut into 4 serving pieces
1. To prepare salsa: In a bowl, mix cilantro, peppers, onion and pineapple. Cover and chill.
2. Combine oil and fresh lime juice in small bowl. Set aside.
3. Heat and oil grill. Grill snapper for approximately 4-8 minutes on each side, basting with lime juice mixture. Fish is done when it flakes easily when tested with a fork and is no longer translucent in the center.
