Apricot Marmalade

APRICOT MARMALADE

1 lb dried apricots
20 oz can crushed pineapple
1 medium orange (juice and all grated peel)
6 cups granulated sugar

1. Soak dried apricots in water overnight.

2. Cook in the same water until soft; mash thoroughly. Add crushed pineapple, grated rind and juice of orange. Stir in sugar. Cook, stirring frequently, until mixture boils and thickens.

3. Scoop into sterilized jars and refrigerate.
