2 small boxes orange Jell-O gelatin
2 cans mandarin orange slices, juice reserved
1 cup boiling water
1 pint orange sherbet (2 cups)
1. In a medium bowl, stir hot water into Jell-O gelatin until it is completely dissolved. Add juice and sherbet and continue to mix until sherbet is melted.
2. Spray jello mold with nonstick spray. Pour Jell-O mixture into mold and gently add orange slices.
3. Refrigerate for several hours (or overnight) until well set. Carefully turn out chilled jello mold onto decorative plate.
