Miniature Toffee Crunch Cheesecakes w/ Dulce de Leche

Most people want chocolate for Valentine’s Day. I’ll take Dulce de Leche, thank you. And cheesecake. And toffee. Heck, I’ll take Miniature Toffee Crunch Cheesecakes with Dulce de Leche.

I once dreamed of having cheesecake as my wedding cake. That didn’t happen, but if I marry my husband again… there will be cheesecake involved in the celebration.

Miniature cheesecakes are about all I can handle right now with my healthy eating goals and all. I took a good nibble and gave these luscious-looking treats away very quickly. The teachers at my son’s school were delighted to acquire them.  And I think they’d be quite a decadent treat for Valentine’s Day too :)

    i LOVE dulce de leche. AND cheesecake. I was actually JUST at the grocery store agonizing over choosing between dulce de leche and cheese cake ice cream. I ended up with the cheese cake cause I JUST had dulce de leche like 2 weeks ago. I would have gotten both, but they wouldn’t have fit in the freezer :)

    OMG do those look great! I guess I’m going to have to purchase the mini cheesecake pan at the store the next time I’m scheduled to work. I wonder where I’ll store it? I love the idea of the cheesecake with dulce de leche because I think the cheesecake will tone down the cloyingly sweet flavor of the dulce.
