Irish Mojito

I’m definitely not Irish. I’m mostly a Swedish girl at heart- big bones, big appetite, a bit on the stubborn side, and many distant relatives in Minnesota. My husband is very Irish though, and when St. Paddy’s Day rolls around… he’s always hoping I’ll whip up some special “Irish” things. I received an email from the Benjamin Steakhouse in NYC the other day, and they were sharing some of their featured St. Patrick’s Day recipes with me. The Irish Mojito was among them. I couldn’t resist mixing this up for my husband.

Here’s the how-to:

You’ll need a big, juicy, fresh lime…

…and a bunch of fresh mint leaves.

You’ll need these two goodies, along with some ice cold club soda…

…and some sugar too.

It’s helpful to have a muddler, but if you don’t have one it’s okay… you can always use the end of a wooden spoon instead.

Squeeze lime juice into a cocktail shaker (or glass). The juice from half a lime will do.

Then add a small handful of mint leaves.

Muddle. That pretty much means, “smash them together.”

Pour in your rum.

Sprinkle in some sugar- as sweet as you desire.

Add some ice.

Put the lid on your cocktail shaker and shake away.

Strain into a glass.  A martini glass works well :)

Top off with a little bit of ice cold club soda.

A wedge of lime for garnish.

Add a drizzle of Creme de Menthe, which will sink to the bottom and make this drink look cool.

And there it is! The festive Irish Mojito! My husband and I both loved it. It’s much like a regular mojito with a little bit more of an added mint element to it. And I absolutely loved its festive look. Perfect for St. Patrick’s Day :)

Irish Mojito

Yield: One cocktail

Prep Time: 10 min

Fun and festive cocktail for St. Patrick's Day celebrations...

Ingredients:

1/2 lime, juiced
small handful of fresh mint leaves
1 1/2 ounces Bacardi Limon
2 teaspoons (more or less) granulated sugar
ice
club soda (a splash)
Creme de Menthe (a splash)
lime wedge, for garnish

Directions:

1. Squeeze half a lime into a cocktail shaker. Add mint leaves. Muddle together using a muddler or the end of a wooden spoon. Add Bacardi, sugar and a handful of ice. Place lid on shaker & shake away.

2. Strain mixture into a glass (martini glass suggested). Top off with a splash of club soda and a drizzle of Creme de Menthe (which will sink to the bottom). Add a lime wedge for garnish, and serve.
