This week, I judged the DRINKS category of the Pacific Natural Foods Everyday Chef Recipe Challenge (which was great fun, by the way). Home cooks were encouraged to enter their own holiday-themed drink creations using Pacific Natural Foods products for the chance to win great prizes. It was a tough decision… since I was lured by the Salted Caramel Snickertini, tempted by the Blueberry Muffin Smoothie and the Cherry Banana Bliss, wishing I had the Hot Buttered Hazelnut Rum or the Hazelnutmeg Alexander, and very curious about the Holiday Hangover Smoothie and the Dominican Rum Eggnog. But the big winner… the one that grabbed my taste-buds by the roots and screamed, “This is it!”… the big winner is the Pumpkin Eggnog Martini– a recipe created by Carly Marchant.
Here’s how you make it:
Rub the rims of two martini glasses with a small amount of agave nectar, then dip the rims in a mix of superfine sugar and pumpkin pie spice.
Here’s the process, and what goes into the martini. Grab a cocktail shaker, fill it with ice and add all of this good stuff. This cocktail is made with a base of Vanilla Almond Milk.
The lid goes on the cocktail shaker, and shake away.
The egg whites in the drink add a little bit of foamy froth to the tops of the martinis. You’ll spot it when you take the lid off after shaking.
Strain the drink into two glasses.
Sprinkle nutmeg on top. Freshly grated nutmeg is best!
And there they are! I’m not usually much of a drinky-drink kind of person, but this is one awesome holiday cocktail! It’s not overly sweet at all, and it is very reminiscent of eggnog with added pumpkin flavor and plenty of rum. Great job, and congrats to Carly- who won a VitaMix Pro for her efforts! The winning recipe in the "Drinks" category of the EveryDay Chef Challenge...
1/2 teaspoon agave nectar
1/4 cup superfine sugar
1/8 teaspoon pumpkin pie spice
2 cups ice
1 cup vanilla almond milk
2 to 2 1/2 ounces dark rum
1 1/2 tablespoons pure (unsweetened) pumpkin puree
2 teaspoons beaten egg whites
1 tablespoon agave nectar
1/4 teaspoon pumpkin pie spice
1/8 teaspoon freshly grated nutmeg
additional freshly grated nutmeg
1. Rub the rims of two martini glasses with agave nectar. Mix sugar and pie spice on a small plate and dip the wet rims into the sugar.
2. Fill a cocktail shaker with ice. Add almond milk, rum, pumpkin, egg whites, agave, pie spice and nutmeg. Put the lid on the shaker and shake several times. Remove the lid and strain the cocktail into the two glasses. Sprinkle each drink with a little more nutmeg. Serve immediately.
