BAILEYS Dessert Recipes to share

I’m excited to share that I’ve partnered with BAILEYS® Coffee Creamers to create some dessert recipes.  The folks at BAILEYS have three new flavors of their creamers that they debuted recently, and they asked me to come up with a dessert recipe inspired be each of the new flavors.  I’m sharing those recipes with you today!  Here are the goodies…

BAILEYS FLAVORS SPRINGSUMMER 2013

Here are the three new flavors (you’ve probably already spotted them in stores!):  Vanilla Brown Sugar (my husband’s favorite), Mudslide and White Chocolate Raspberry Swirl (my current obsession).  We always have these in our fridge for adding to coffee, but I’m showing you how you can use them in recipes too!

To showcase the Vanilla Brown Sugar flavor, I created BAILEYS® Vanilla Brown Sugar Cookie Bars.  These are a sturdy, little handheld treat- a sugar cookie bar topped with a generous layer of Vanilla Brown Sugar Icing.  They freeze well.  They were a big hit in my neighborhood with both kids and adults alike.  The recipe can be found here:  BAILEYS® Vanilla Brown Sugar Cookie Bars A recipe how-to video follows:


BAILEYS Mudslide- Espresso Brownie Bites- from RecipeGirl.com

To showcase the Mudslide flavor, I created a chocolate-lover’s treat:  BAILEYS® Mudslide Espresso Brownie Bites.  These are a bite-sized, espresso-infused chocolate mudslide flavored brownie dunked in a rich glaze and topped with a chocolate covered espresso bean.  Despite the “mudslide” reference, there is no alcohol in the recipe.  My kiddo devoured these but (thankfully) he picked off the espresso beans and gave them to me.  Coffee-lover adults will love these as-is.  The recipe can be found here:  BAILEYS® Mudslide Espresso Brownie Bites A recipe how-to video follows:

BAILEYS White Chocolate- Raspberry Swirl Sandwich Cookies- from RecipeGirl.com

And finally, to showcase the White Chocolate Raspberry flavor, I created (my favorite dessert of the three!)BAILEYS® White Chocolate Raspberry Sandwich Cookies.  These are raspberry-flavored white chocolate chip cookies sandwiched together with a sweet marshmallow-raspberry filling.  It’s a grand dessert… it’s pretty, and all of my taste testers really seemed to love this one.  You can find the recipe here > BAILEYS® White Chocolate Raspberry Cookie Sandwiches A recipe how-to video follows:

    Interestingly step 4 of the mudslide brownie bites seems to skip a bit: “Let them cool completely adding the ganache.” doesn’t actually explain how to make the ganache or apply it. It’s obvious enough to someone who’s done it before, but a bit of a weird omission for a product tie-in :)

    I love your blog but this is the first time I leave you a message. Bailey’s is my favorite liquor. I even named my yellow Labrador Bailey! ;-) Unfortunately we don’t have the coffee creamers in Brazil but I would surely get addicted to them. Your recipes look delicious!

    Hi. We don’t have those creamers in Australia (pity!!!) so could you use Baileys Irish Cream instead for flavour?
