Brie mixes
fabulously well with the sweet taste of blueberries...

fresh blueberries |

brown sugar |

cornstarch |

shallots, chopped finely |

cider vinegar |

grated fresh ginger |

cinnamon |

Combine all
ingredients (except brie) in a large saucepan.
Bring to a boil over medium heat, and cook 2
minutes. Remove cinnamon stick. Cover and chill
blueberry mixture for about 1 ½ hours. |

Preheat oven
to 350 degrees F. |

Place brie
round on baking sheet. Bake 15 minutes, or until
cheese is soft. Carefully move hot brie to a
serving plate, and top with chilled blueberry
mixture. |
