package of frozen chopped spinach,
thawed and squeezed dry |

yellow onion, diced |
|

Rotel tomatoes, drained |
|

package cream cheese, softened |
|

shredded Monterey Jack cheese |
|

splash of milk |
|

garlic salt to taste |

|

salt
and pepper to taste |

Preheat oven
to 350 degrees. Grease 2 quart baking dish. |

In a medium
bowl, mix spinach, onion, tomatoes, cream cheese
and jack cheese. Spread into prepared baking
dish. Cover and bake for 10 minutes. |

Remove from
oven, stir to combine ingredients. Add a splash
of milk, garlic salt, salt and pepper and stir
until well blended. Bake for an additional 15
minutes, uncovered. |

Serve warm
with tortilla chips, pita chips or crackers. |
