  APPETIZER DIPS AND SPREADS: 
Olive Tomato Tapenade

 

Olive-Tomato Tapenade

 

A large recipe for a big bash- your guests will love it...
 

¾ lb 

 

roasted red onions

 

1/8 cup 

 

fresh garlic

 

1 Tbs 

 

dried oregano

 

2 cups 

 

stuffed green olives

 

¼ cup 

 

sun-dried tomatoes

 

1 Tbs 

 

dried basil

 

8 whole 

 

anchovies (optional)

 

2 cups 

 

olive oil

Run all ingredients through the food processor, then mix well. Store in an airtight container.

Serve this wonderful spread with sliced baguette and crackers.

 

 Cooking Tips

*Place sliced red onions on a large baking sheet. Spray with cooking spray and roast until slightly browned and blackened on edges.

*If you can find sun-dried tomatoes dry and not packed in oil, use those.

Hey!  This one's a keeper- would make it again.  "I would make this again with slightly less garlic.  It might even be nice with roasted garlic instead.  I left out the anchovies!"
