Feta-Artichoke Bites

Your guests will love these...

½ cup		jarred, roasted red bell peppers, chopped
¼ cup		chopped ripe black olives
¼ cup		crumbled feta cheese
1 Tbs		olive oil
13 ¾ oz		can artichoke bottoms (approx. 15 pieces), drained and patted dry

1	Preheat broiler, and line a cookie sheet with foil.
2	In medium bowl, combine peppers, olives, cheese, and olive oil.
3	Place artichoke bottoms on prepared cookie sheet. Mound 1 ½ t. of stuffing on each artichoke. Broil 7 minutes, or until golden on top. Transfer artichokes to platter and serve hot.

Yield: 15 pieces
