Feta-Artichoke Bites |

jarred, roasted red bell peppers,
chopped |

chopped ripe black olives |

olive oil |

artichoke bottoms (approx. 15 pieces),
drained and patted dry |

Preheat
broiler, and line a cookie sheet with foil. |

In medium
bowl, combine peppers, olives, cheese, and olive
oil. |

Place
artichoke bottoms on prepared cookie sheet.
Mound 1 ½ t. of stuffing on each artichoke.
Broil 7 minutes, or until golden on top.
Transfer artichokes to platter and serve hot. |
