Mango,
Black Bean and Goat Cheese Quesadilla |

This makes a
great snack, or even a light meal for two.

flour tortillas |
|

goat
cheese, crumbled |
|
|

mango, peeled and sliced into small
pieces |
|
|

oz |
|
canned black beans, drained and rinsed |
|

Coat both
sides of tortillas with cooking spray. Place
tortilla in hot skillet to brown. Flip tortilla
and add cheese, mango and beans on half of the
tortilla. Cook until tortilla browns. Fold over
tortilla to cover ingredients and serve. |

Repeat
instructions above with second tortilla. |

Cut into
wedges and serve immediately. |
