Zucchini Rounds

A delightful way to serve this tasty vegetable...

2 lbs		small zucchini
¼ lb		butter
¼ lb		sharp cheddar cheese, grated
3 oz		cream cheese
2 large		egg whites

1	Preheat oven to 375 degrees F.
2	Slice zucchini on the diagonal.
3	In a saucepan, heat butter and cheeses until melted.
4	Whip the egg whites until stiff. Whisk into butter and cheese mixture. Cool and spread generously on zucchini.
5	Bake 20 minutes. Serve warm.
