La Jolla Lemonade

 

A lovely homemade lemonade...
 

1 cup 

 

fresh or frozen raspberries

 

12 cups 

 

water

 

3 cups 

 

fresh lemon juice (about 15 large lemons)

 

1½ cups 

 

granulated sugar

 

2 tsp 

 

finely chopped fresh mint

 

 

 

additional mint leaves, raspberries and lemon slices

In a large glass or ceramic bowl, mash the raspberries lightly with a fork. Add water, lemon juice, sugar and mint to the raspberries and mix gently until sugar dissolves.

Strain the raspberry mixture into a large pitcher, discarding the solids. Chill, covered, in the refrigerator. Pour the lemonade over ice in glasses and garnish with additional raspberries, lemon slices and/or fresh mint leaves.
