white peaches, halved, pitted, and each
half cut into 4 wedges (skin on) |

peach ice cream |

¾
cup |

crème de cassis- plus extra for
drizzle |

chilled brut champagne or sparkling wine |

|

In the
bottom of each of 6 tall glasses, place 3
peach wedges. Top with 1 scoop of ice cream,
then another 3 peach wedges. Add second scoop of
ice cream and top with 2 more peach wedges.
Drizzle each with 2 T. crème de cassis. Pour a
little
champagne into each glass. Top with 1 small scoop
of ice
cream. |

a little more crème de cassis, and serve. |
