 Club Sandwich

 

Great old standard- jazzed up a bit...
 

 

 

SPREAD:

 

1/3 cup 

 

mayonnaise

 

2 Tbs 

 

minced chives

 

½ tsp 

 

dried tarragon
 

 

 

 

SANDWICH:

 

5 slices 

 

bacon, cut in half- cooked brown and crisp

 

6 thin 

 

slices whole wheat bread, lightly toasted

 

4 thin 

 

slices tomatoes

 

¼ lb 

 

thinly sliced roasted turkey

 

½ bunch 

 

watercress, stems trimmed

Combine spread ingredients in a small bowl. Refrigerate until ready to use.

Spread one side of each bread slice with spread. Arrange bacon and tomato on top of spread on two bread slices. Top each with second bread slice. Arrange turkey and watercress on top. Top each sandwich with third bread slice, spread side down.

Cut each sandwich in half diagonally. Secure with decorative toothpicks.

 

Servings: 2

*The spread may be prepared a day in advance. Cover and refrigerate.
