 Cranberry Orange Bread

 

A moist bread with zesty flavor...
 

1 cup 

 

sugar

 

1 Tbs 

 

grated orange peel

 

¾ cup 

 

water

 

1/3 cup 

 

fresh orange juice

 

2 Tbs 

 

oil

 

1 large 

 

egg

 

2 cups 

 

flour

 

1 ½ tsp 

 

baking powder

 

1 tsp 

 

salt

 

½ tsp 

 

baking soda

 

1 cup 

 

halved fresh or frozen cranberries (do not thaw)

 

1 cup 

 

chopped nuts (optional)

Preheat oven to 350 degrees Grease bottom only of 9x5" loaf pan.

In large bowl, combine sugar, orange peel, water, orange juice, oil and egg; blend well. Add flour, baking powder, salt, and baking soda; stir just until dry ingredients are moistened. Stir in cranberries and nuts. Pour into greased pan.

Bake 50-60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack.

 

Servings: 12

Yield: One loaf
