Cranberry Pumpkin Bread

 

A wonderful blend of fall flavors...
 

2 large 

 

slightly beaten eggs

 

2 cups 

 

granulated sugar

 

½ cup 

 

oil

 

1 cup 

 

canned pure pumpkin

 

2¼ cups 

 

flour

 

1 Tbs 

 

pumpkin pie spice

 

1 tsp 

 

baking soda

 

½ tsp 

 

salt

 

1 cup 

 

chopped dried cranberries

Preheat oven to 350°F. Grease and flour two loaf pans.

Combine first 4 ingredients; mix well.

Combine flour, spice, baking soda and salt in a large bowl. Add pumpkin mixture; stir just until dry ingredients are moistened. Stir in cranberries.

Spoon batter into prepared pans. Bake for 1 hour, or until toothpick inserted in center comes out clean.

 

Yield: Two loaves
