 Deluxe Tuna Melts

 

A little more flavor than the regular old tuna sandwich...
 

1 12.25oz. 

 

can white albacore tuna (packed in water), drained

 

1 stalk 

 

celery, finely diced

 

2 Tbs 

 

minced fresh parsley

 

2 Tbs 

 

sweet pickle relish

 

1 tsp 

 

fresh lemon juice

 

½ cup 

 

mayonnaise

 

4 slices 

 

sourdough bread

 

1 cup 

 

shredded sharp cheddar cheese

Preheat broiler.

In a medium bowl, combine all ingredients (except bread). Toss with a fork until well-mixed.

Place bread slices on broiler pan. Divide tuna mixture evenly among slices. Sprinkle cheese evenly over tuna mixture.

Place under broiler and grill until the tops just begin to bubble and are golden (4 minutes). Be careful not to let the cheese brown too much.

Serve immediately.
