 Irish Soda Bread

 

Great recipe for those who enjoy Irish Soda Bread...
 

4 cups 

 

flour

 

1 tsp 

 

salt

 

3 tsp 

 

baking powder

 

1 tsp 

 

baking soda

 

¼ cup 

 

sugar

 

¼ cup 

 

butter

 

2 cups 

 

currants (or seedless raisins)

 

1 large 

 

egg, lightly beaten

 

1 ¾ cups 

 

buttermilk

Preheat oven to 375 degrees F. Grease two 8" round cake pans or cookie sheet.

Combine dry ingredients in a large bowl. Add butter and cut in with a pastry blender until crumbly. Mix in currants. Beat egg and buttermilk into dry ingredients until blended.

Turn dough onto floured cutting board and knead until smooth (2-3 minutes). Divide dough in half and shape into rounds.

Place rounds into cake pans or onto cookie sheet. Press down and cut crosses on top, ½" deep.

Bake 35-40 minutes.

 

Yield: 2 loaves

 

 Cooking Tips

*Rather than use a floured board, try using a silicone board or mat. You will only need to dust it with flour, and the dough won't get dry with the extra flour.
