 Meatball and Pepper Subs

 

An Italian favorite...
 

1 large 

 

onion, sliced

 

3 large 

 

bell peppers (any color), seeded and sliced

 

1 lb 

 

meatballs

 

2 cups 

 

pasta sauce

 

1 loaf 

 

French bread

Sauté sliced onion in a little bit of oil for 2-3 minutes. Add peppers and cook, stirring frequently, for several minutes. Add the meatballs and sauce, and stir until well-mixed and heated through.

Split the loaf in half horizontally and spoon the meatballs, peppers, onions and sauce onto the bottom half of the bread. Replace top and carefully slice loaf into four pieces.

Serve while still warm.
