currants (or seedless raisins) |

egg,
lightly beaten |

buttermilk |

Preheat oven
to 375 degrees F. Grease two 8" round cake pans
or cookie sheet. |

Combine dry
ingredients in a large bowl. Add butter and cut
in with a pastry blender until crumbly. Mix in
currants. Beat egg and buttermilk into dry
ingredients until blended. |

Turn dough
onto floured cutting board and knead until
smooth (2-3 minutes). Divide dough in half and
shape into rounds. |

Place rounds
into cake pans or onto cookie sheet. Press down
and cut crosses on top, ½" deep. |

Bake 35-40
minutes. |

Yield: 2 loaves |

Cooking Tips |
|
*Rather than use a
floured board, try using a silicone board or mat. You
will only need to dust it lightly with flour, and the dough won't get dry
with the extra flour. |
