Mini Popovers

 

 Mini-Popovers

 

These are light and low in fat...
 

¾ cup 

 

low fat buttermilk

 

2 large 

 

eggs

 

¾ cup 

 

sifted flour

 

1 Tbs 

 

butter

 

 

 

pinch of salt

Preheat oven to 375 degrees. Spray 12 cup mini-muffin pan with nonstick spray.

In a blender, place buttermilk and eggs and blend on medium speed. While blender is running, slowly add the flour, butter and salt. Blend until combined 1-2 minutes.

Heat muffin pan in oven just until cooking spray begins to smoke a bit 1-2 minutes. Remove the pan from the oven and carefully spoon batter into the cups, filling each just to the rim. Bake until popovers are puffed and golden- 25-30 minutes.

 

Servings: 12

Serving Tips:
 
*Delicious with breakfast foods such as frittatas and omelettes, and also great to accompany soups, salads and chilis.

Hey, This one's a keeper!- would make it again.  "These are nice, low fat little muffins.  I served these with the Onion, Bacon and Spinach Frittata on this site.  It made for a nice, light dinner."
