These are light
and low in fat...

low fat buttermilk |
|

eggs |

sifted flour |

butter |
|
|
|

pinch of salt |

|

Preheat oven
to 375 degrees. Spray 12 cup mini-muffin pan
with nonstick spray. |

In a
blender, place buttermilk and eggs and blend on
medium speed. While blender is running, slowly
add the flour, butter and salt. Blend until
combined 1-2 minutes. |

Heat muffin
pan in oven just until cooking spray begins to
smoke a bit 1-2 minutes. Remove the pan from the
oven and carefully spoon batter into the cups,
filling each just to the rim. Bake until
popovers are puffed and golden- 25-30 minutes. |

Serving Tips:
*Delicious with breakfast foods
such as frittatas and omelettes, and also great to
accompany soups, salads and chilis. |
