Preheat oven
to 350 degrees F. Grease and flour 2 loaf pans. |

In medium
bowl, mix flour, salt, baking powder, baking
soda and cinnamon. |

In a
separate large bowl, mix together oil, eggs,
sugar and vanilla. Add dry ingredients and mix
well. Fold in zucchini and nuts. |

Pour batter
into prepared pans and bake for 1 hour. Bread is
done if toothpick inserted in center comes out
clean. |
