 White Peach and Champagne Floats

 

Perfect summer dessert, or a nice ending to brunch...
 

6 medium 

 

white peaches, halved, pitted, and sliced (skin on)

 

2 pints 

 

peach ice cream

 

¾ cup 

 

crème de cassis- plus extra for drizzle

 

 

 

chilled brut champagne or sparkling wine

In the bottom of each of 6 tall glasses, place 3 peach wedges iTop with 1 scoop of ice cream, then another 3 peach wedges. Add second scoop of ice cream and top with 2 more peach wedges. Drizzle each with 2 T. crème de cassis. Pour a little  champagne into each glass. Top with 1 small scoop of ice cream.

Drizzle with a little more crème de cassis, and serve.

 

Servings: 6

 

 Cooking Tips

*Creme de cassis is also known as black current liqueur.  Try using other flavors of berry liqueurs too.

**Layer the fruit and ice cream in clear frosty collins or pilsner glasses for a very cool treat.
