Preheat oven to
350 degrees F. Grease muffin tins. |

Combine first 6
ingredients in a large bowl. Add brown sugar.
Stir in apples and carrots. Add raisins and
pecans. |

Make a well in
the center of the mixture and add oil, eggs,
milk and vanilla. Stir just until moistened.
Gently stir in carrots and apples. |

Scoop batter
into muffin tins. Bake 18-20 minutes until
nicely browned. |
