Cranberry Orange Bread

 

Can't get enough of this one...
 

2 cups 

 

flour, sifted (measure, then sift)

 

1 cup 

 

granulated sugar

 

1 tsp 

 

salt

 

1½ tsp 

 

baking powder

 

½ tsp 

 

baking soda

 

½ tsp 

 

ground cloves (don't even think of leaving this out!)

 

¾ cup 

 

orange juice (fresh is best)

 

2 tsp 

 

orange zest

 

¼ cup 

 

butter, melted

 

1 large 

 

egg, slightly beaten

 

1 tsp 

 

vanilla extract

 

1 cup 

 

walnuts, chopped

 

1 cup 

 

fresh cranberries, sliced in half

Preheat oven to 350°F. Grease bottom only of 9x5-inch bread pan.

In a large mixing bowl, combine dry ingredients (through cloves).

In another bowl, mix together juice, zest, butter, egg, and vanilla.

Stir wet ingredients into dry and mix just until combined. Fold in nuts and berries. Pour into prepared pan. Bake 55 to 60 minutes. Cool in pan 15 minutes before turning out onto wire rack to cool completely.

 

Yield: 1 loaf

 

 Cooking Tips

*Greasing the bottom of the pan only and not the sides helps to avoid the bread from falling in the center.
